Gluten Free and Rice Free Pancakes

Another one from Kim when I wasn't able to eat rice. Thank you!

1 1/2 cups millet flour
1/2 cup potato starch or tapioca starch
1/2 tsp xanthan gum
1 Tbsp sugar
4 Tsp baking powder
1 tsp salt
1 1/2 cups water
1/4 cup oil
4 1/2 Tbsp water
4 1/2 Tbsp oil
1 Tbsp baking powder
1/2 cup applesauce, OR 1 mashed banana (optional)

Mix together the 4 1/2 tbsp water, 4 1/2 tbsp oil, and 1 tbsp baking powder and set aside - this is the egg replacement.

Mix dry ingredients together. Add wet ingredients including egg replacement.

Pour 1/3 or 1/4 cup portions on a hot pan and cook on both sides.

  1. Thank you, thank you! My son has extensive food allergies and sensitivities. We recently removed rice from his diet and have been searching for a gluten free, dairy free, rice free pancake recipe. This is excellent! We can have eggs, so I used 2 eggs and omitted the applesauce/banana because the batter tasted so good. This will be a new favorite for sure. Thank you for making breakfast a little easier in our crazy food life!
