1 envelope unflavored gelatin
1/3 cup water
2/3 cup dairy-free milk substitute
2 cups (1 can) pumpkin
1/2 cup brown sugar
1/4 cup white sugar
1 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon ginger
1/2 teaspoon salt
9-inch pre-baked or graham cracker pie crust
Put gelatin and water in a sauce pan over low heat to dissolve. Add remaining ingredients, mix well, and pour into a 9-inch pre-baked or graham cracker pie crust. Refrigerate for a few hours before slicing and serving.
