TED Mashed Potatoes

Basic TED

Peel and cube potatoes, and toss into a large pot of salted cold water. Bring to a boil and cook until just tender, not mushy. Drain and place in a large bowl.

Add a very generous amount of olive oil and more salt, and whip with an electric mixer on high until creamy and fluffy. Add rice milk as needed to make creamy. Add as much oil as needed for flavor.

They are actually quite fantastic, esp. when on the early TED.

  1. I also leave the skins on (especially red potatoes)...it adds nutrients, texture, and takes away a step making it easier - something every TEDMama needs!:) When you get to the point of adding spices, it is especially yummy with pepper and garlic!

  2. Great idea Jill! I keep forgetting about red potatoes... Not having to peel is fabulous! And a definite "YES" to the garlic. Delicious! I was so glad I trialed garlic and onion in the beginning, it adds to much flavor to use those!
